Nothing like going to bed at 11 with a 5 run lead only to wake up to see your closer crapped his pants again. Not an ideal way to start your morning, but we clapped back with the DCO hats. Been on a roll lately folks. Tonight I got ribs on the smoker. Should be falling off the bone around 6:30-7. Gonna pair that with some roasted asparagus and and garlic toast. But, I need to tell you about something I made the other day. Smoked and roasted pork belly, served with arugula and a homemade balsamic blueberry compote. Fucking out of this world. Got 25lbs of homemade bacon hitting the smoker this weekend, might dabble in making duck confit with duck fat I rendered down last fall and the new job starts Monday. Life is grand.

I have no idea what balsamic blueberry compote or duck confit is but you make it sound delicious.
Compote just means fruit cooked until it becomes syrup like. The balsamic made it a little sharp so we added honey.
Confit is just a fancy way of saying ” duck cooked in its own fat”. Doubles down in the flavor.

I’m glad you asked Dave, I absolutely crushed it today working on a new project. I’m going to reward myself with some Tito’s and tacos. I like to think being one of the lucky few to snag a DCO hat gave me that extra motivation after lunch.
Update: Blind JackJack got his own taco. Avocado (not smashed) on mine but not his.
