Weekend was a mess

Husband is cooking for the first time in awhile, so burnt whatever he conjures up.
Tacos and Gatorade.

A busted bracket.
Leftover bacon wrapped steak with roast veggies and a German imported beer (or three). Might crack open a pint of moose tracks ice cream. Definitely not starving tonight.
Tossing a couple of good ole corn dogs in the microwave tonight
Grilled swordfish with a side of pasta tossed with veggies and olive oil.
Who’s your swordfish supplier? How to your prepare/cook it? Almost went with it at Central Market but opted with the safe bet (salmon).
Airline Seafood Co at the Eastside Market on Saturday morning (Eastside and Richmond in Htown). Mahi, swordfish, red fish, snapper all for $16 – $20 / lb and anything else you want at a great price. Pro tip: hit up the Indian food tent that’s right when you walk in the lot. Makes for a delicious and easy weeknight meal and they have about a dozen options to chose from. They’re all GOOD.
For the fish: pat dry, season with lemon, olive oil, salt, pepper. Made a pan sauce of butter, garlic, olive oil, white wine, shallot, herbs. Cooked fish on grill pan, few minutes per side, basted with pan sauce, finished in oven at 375 for 10ish minutes. Would have grilled but ran out of charcoal starters for my BGE. First time making swordfish and it turned out pretty good for a native midwesterner.
Made chicken stir fry while watching the Twins start the season 1-0. Life is not terrible.
